The Fully Loaded Ginger

Serves 5
10 Lil' Devils cookies
1 pint espresso or dark chocolate ice cream
1 cup Candied Ginger, cut into thin strips
(You can also use store bought candied ginger)
Instructions:
1. Using a Jelly Roll pan, lay 5 Lil' Devils cookies upside down, add 1 scoop, about 2 tablespoons of dark chocolate ice cream to each cookie. Top each one with the remaining cookies and sandwich together. Roll the sides of each sandwich into the ginger strips. (If the ice cream is melting, place sandwiches in freezer until firm enough to roll in ginger, you may need to gently press the ginger into the ice cream with your fingers.) Freeze until firm, at least 2 hours; then wrap individually in plastic wrap until ready to serve.
